Watermelon and Mint Infused Gin

1. Firstly, tear the mint leaves slightly before placing the full sprig inside the siphon. Tearing or ‘bruising’ a closed substance first will allow the flavours to infuse better and increase the strength of taste.

2. Following this, add the watermelon chunks, making sure to lightly squeeze them (again using the bruising technique) before dropping into the dispenser. The reason for slightly ‘damaging’ the solid ingredients is to open the pores of the mint and watermelon, which should aid the combination inside the dispenser to give a more intense flavour.

3. Once your solid ingredients are added, pour the gin into the dispenser, then tightly screw the dispenser head onto the canister.

4. Attach the Cosmic Whip Nitrous Tank and Regulator to the Dispenser and turn on the pressure. You should hear a hissing noise. Turn off the pressure.

5. Now you can leave the dispenser for as long as you want; the longer you leave it, the stronger the results of the infusion, but your infused watermelon and mint gin is ready to drink whenever – it just depends on your speed preferences, for example, if you’re making different cocktails or bottles of booze!

6. We recommend giving the dispenser a hearty shake for around one minute, then leaving it to stand for a few more minutes for great results.

7. You will need to carefully disperse the gas from the chamber in the upright position (not upside down like you would if you wanted to create a yield!) as you don’t want any liquid to escape.

8. SAFETY TIP: You must ensure that you have released all of the gas from the dispenser before dismantling the dispenser. Attempting to dismantle the dispenser before this can result in accidents or injuries as the chamber is still pressurised and the gas is not being controlled.

9. Be sure to use a strainer to pour your infused gin into a container that doesn’t include any bits or remnants of the ingredients used to infuse.
